Food is a very special part of Food As Medicine.
Our delicious, colorful gourmet lunches are designed by renowned chef and author Rebecca Katz, MS. Meals are buffet, to encourage participants to sample to their hearts’ content. There are plenty of vegetarian, vegan and gluten-free options at every meal. Other severe dietary restrictions? No worries- just let us know at registration, and we’ll work do our best to accommodate your needs.
Participants physically experience the effects of fresh, healthy, organic whole foods; sit at round tables with faculty members and discuss questions and special concerns; and enjoy whole foods demonstrations with Natural Chef Instructor Catherine McConkie and a practical cooking class with Chef Katz.
New this year: Cooks on Call. The Healing Kitchens Institute has generously partnered with the Center in funding a how-to table where top healthy food chefs and interns will be teaching basic cooking techniques to attendees during breaks. We are honored to include guest chefs Jo Cessna, Stefanie Sacks, and Marti Wolfson – a dream healthy foods team.
We make sure participants are equipped with the basics needed to explore a simple, healthy whole foods diet for themselves, their families and patients/clients upon completion of the course.
