Definitely a medical conference like no other I have been to. Started my day with meditation, followed by drawing “my relationship with food” with brightly colored crayons, then some mindful eating, whole foods demonstrations, conversations with representative from a vegetarian culinary arts school, chair massage during breaks, meaningful discussions about human nutrition that I am still assimilating, an incredible array of a vegetarian/gluten-free buffet lunch, and culminating with a table side prep of braised kale, fresh dressed herbal salad and a demo of how to make your own sauerkraut. To describe my experience in one word—“renewal”—of purpose or drive of living. Thank you.
