Food As Medicine 2012 - Day 4

Jeanne Wallace, PhD, CNC got a well-earned standing ovation first thing this morning for her brilliant Modulatinig Oncometabolic Syndrome: Integrative Diet & Nutrition to Complement Cancer Care. If there a Jeanne Wallace fan club, tell us how to join!

Many of us have long admired Brenda Davis, RD, as the eminent author of the authoritative texts on her lecture topic, Vegetarian, Vegan & Raw. Did you know about her remarkable research in the Marshall Islands on reversing diabetes? She gave us a preview and we look forward to the published paper. Core faculty member Cindy Geyer, MD rounded out a memorable morning and pulled it all together clinically with case studies in Condition-Specific Nutrition Therapies.

One more delicious lunch, with smiles all around: Arugula salad with strawberry, blueberry & fennel; shredded carrot & beet salad; leek, kale & tomato fritata; jicama sticks with mint guacamole; and lemony lentil soup with pistachio mint pesto. We all agree we have reached food nirvana.

After lunch, Executive Chef Rebecca Katz, MS, took center stage and showed us how to cook a quick and easy summer meal incorporating food as medicine, and reminded us that the kitchen is a place for both healthy nutrition and joy. Can’t wait to turn up the music and my Vitamix and try that veggie-packed gazpacho with avocado cream!

And right before the very end, we thanked the hotel staff of the Hyatt Regency Bethesda, from the bellmen and front desk clerks to the banquet servers, set-up crews, event managers and– most important of all– Chef Jack Stubbs and his wonderful kitchen staff. It has been our great pleasure to be at this hotel for Food As Medicine for 2 years, and never have we had a better experience.

My thanks to Dr. Gordon, my brilliant friend and colleague Kathie Swift, MS, RD, our remarkable Food As Medicine faculty and staff, and most especially to our attendees– marvelous people, doing wonderful things, from all over the world. We hope the feast of Food As Medicine 2012 has nourished you and improved your dreams!

And if you didn’t join us this year, we have an announcement to make that may interest you: our next Food As Medicine is June 6 – 9, 2013 in Indianapolis, Indiana. This will be our first FAM in the Midwest, and we can hardly wait. Join us!
